Avocado Umeboshi Toast

Valentina

If you've never tried umeboshi paste, this is the perfect recipe for it. The traditional Japanese paste is made from pureed, fermented ume plums. Rather than being sweet, the taste is best described as tangy, salty, and a little sour. The flavors soar when paired alongside creamy avocado. Toast up your favorite crusty bread and give it a try.

Shopping List
  • 2 thick slices crusty bread of choice (see notes)
  • 1/2 ripe avocado
  • umeboshi paste, to taste
  • hemp seeds, to taste (optional, for topping)

Instructions
  1. Step 1: Toast the bread until it's golden and crunchy.
  2. Step 2: Spread a thin layer of umeboshi paste on the bread. Be light-handed here, as the flavor is quite strong. I use only about 1 to 2 teaspoons per slice of bread, depending on the size.
  3. Step 3: Lightly mash the avocado with a fork and spread it onto the bread. Sprinkle with optional hemp seeds.
  4. Serve: Take a big bite and enjoy.

Recipe Notes

Wholemeal, seeded, and oat-based breads work especially well here. For a homemade bread option, try these tasty Bagels. Sweet potato toasts are also a delicious option.
