Almond and Garlic Dip (Bitchin' Sauce Copycat)

Valentina

A creamy and garlicky savory dip made from a combination of almonds, aminos, nutritional yeast, and warming spices. If you're a fan of hummus or the popular store-bought Bitchin' Sauce, then the odds are good that you'll love this too. Available with three flavor variations listed below (the cilantro version is my personal favorite).

Shopping List
    Classic Version
  • 1 cup slivered almonds
  • 3/4 cup water
  • 1/4 cup + 1 tablespoon(s) lemon juice
  • 1/4 cup grapeseed or avocado oil
  • 4 garlic cloves
  • 3 tablespoons braggs aminos (or low-sodium tamari or coconut aminos, Note 1)
  • 1 tablespoon nutritional yeast
  • 3/4 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon onion powder Cilantro Version
  • 2 handfuls fresh cilantro leaves
  • 1/2 jalapeño (optional) Chipotle Version
  • 1/2 chipotle pepper, packed in adobo sauce (double for spicier)

Instructions
  1. Step 1: Combine all of the Classic Version ingredients in a high-powered blender (there is no need to soak the almonds if using a high-powdered blender). Blend until super smooth, scraping down the sides as needed. It will seem quite watery, but will thicken in the refrigerator.
  2. Step 2: If making the cilantro or chipotle versions, add those ingredients now. Blend again until super smooth.
  3. Step 3: Transfer the sauce to an airtight container and refrigerate at least one hour to overnight to thicken. If it seems too thick, add in 2 to 3 tablespoons of water until it reaches a thick sauce consistency.
  4. Serve: Use this as a tasty dip for crackers, hearty salads, or grain bowls. It's delicious in Bitchin' Sauce Macro Bowl.

Recipe Notes

Note 1: If using a fully-salted tamari or soy sauce, I recommend using a little less than the 3 tablespoons called for and adding more in later after you give it a taste test.
