Bitchin' Sauce Tofu Macro Bowl

Shopping List
  • 2 large sweet potatoes (we like purple ones)
  • 4 servings tofu (such as marinated tofu)
  • 8 handfuls chopped kale
  • 4 cups broccoli or cauliflower florets
  • 2 cups cooked brown rice
  • 4 tablespoons extra-virgin olive oil, divided
  • Bitchin' Sauce or hummus, to taste (Note 1)
  • sauerkraut, to taste

Instructions
  1. Step 1: Cook or defrost your brown rice according to package directions. Set aside.
  2. Step 2: Preheat the oven to 400 degrees Fahrenheit. Remove all of the hard, fibrous stems from the kale, reserving only the leafy greens.
  3. Step 3: Remove the hard, fibrous stems from the kale.
  4. Step 4: Place the kale leaves in a mixing bowl with 1 tablespoon of the olive oil. Season with salt. Use your hand to massage the oil into the leaves for about 15 seconds. Spread the kale over a baking sheet and roast for 5 minutes, or until the edges crisp. Transfer to a bowl.
  5. Step 5: Dice the sweet potato into 1 inch pieces. Spread the potato pieces on a baking sheet and toss with 2 tablespoons of the olive oil. Season with salt and pepper. Roast at 400 degrees Fahrenheit for 25 to 30 minutes, or until fork tender. Flip the potatoes over halfway through cooking.
  6. Step 6: Meanwhile, spread the broccoli florets on a baking sheet and toss with the remaining 1 tablespoon of olive oil. Season with salt and pepper. Roast the florets in the oven alongside the potatoes for 15 to 20 minutes, or until lightly browned. If you play your cards right, the potatoes and broccoli will be done around the same time.
  7. Serve: Build your bowls with the warm rice, kale, broccoli, and sweet potatoes. Top with tofu, sauerkraut, and a big dollop of Bitchin' Sauce or hummus. Season and drizzle with olive oil. Enjoy.
