10-Minute Zucchini and Sun-Dried Tomato Salad

Here's an easy Mediterranean salad that takes only minutes to throw together. The combination of juicy marinated artichoke hearts and sun-dried tomatoes are delicious alongside the soft crumbly cheese (cashew cheese is tasty here) and fresh greens. Make it a meal alongside a simple turkey patty or vegetarian lentil patty.

Shopping List
  • 1 small zucchini, sliced paper-thin
  • 2 1/2 ounces marinated artichoke hearts (about 6 quarters)
  • 2 ounces spinach or arugula
  • 1 ounces sun-dried tomatoes, packed in oil
  • 1/4 cup soft vegan cheese, crumbled (about 1 ounce)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Instructions
  1. Step 1: Roughly chop the artichoke hearts and sun-dried tomatoes into bite-sized pieces. Very thinly slice the zucchini (no need to cook it, since we'll be adding it raw to the salad).
  2. Step 2: Toss all the ingredients together in a large bowl. Taste and adjust seasonings as desired.
  3. Serve: Transfer onto plates and enjoy.
