Spinach Salad with Zucchini and Sun-Dried Tomatoes

An easy Mediterranean salad made with marinated artichoke hearts, raw zucchini, sun-dried tomatoes, feta cheese, and spinach. Make it a meal alongside a Juicy Turkey Patties or Mediterranean Lentil Patties.

Shopping List
  • 1 small zucchini
  • 1/2 cup marinated artichoke hearts (2.5 ounces)
  • 2 1/2 ounces spinach
  • 1/4 cup oil-packed sun-dried tomatoes (1 ounce)
  • 1/4 cup feta cheese or vegan cheese, crumbled (about 1 ounce)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • salt and pepper, to taste

Instructions
  1. Step 1: Cut the ends off of the zucchini and slice it as thinly as possible. We'll be adding the zucchini raw, carpaccio-style.
  2. Step 2: Roughly chop the artichoke hearts and sun-dried tomatoes into bite-sized pieces. Leave a little of the sun-dried tomato oil on the tomatoes to add extra flavor to the salad.
  3. Step 3: Combine the sliced zucchini, artichoke hearts, spinach, sun-dried tomatoes, and cheese in a large bow. Toss with the olive oil and lemon juice. Season with salt and pepper.
  4. Serve: Transfer onto plates and enjoy.
