Wild Mushroom and Blue Cheese Pizza

Shopping List
  • 1 fresh or frozen pizza crust of choice
  • 1 extra large yellow or red onion, sliced (or 1.5 medium-sized)
  • 3 tablespoons olive oil (divided)
  • 6 ounces wild mushrooms, sliced (such as shiitake)
  • 1 cup shredded mozzarella or asiago cheese
  • 1 1/2 ounces blue cheese, crumbled (about 1/3 cup)
  • 1 handful arugula
  • salt and pepper, to taste
  • truffle oil or truffle seasoning

Instructions
  1. Step 1: Let's start by making the caramelized onions. Heat 1 tablespoon of the olive oil in a skillet over medium heat. Add the sliced onion and a pinch of salt. Continue to cook for about 20 to 25 minutes, stirring every few minutes and adding a splash of water to the onions as needed to prevent sticking or burning. The onions will be ready when they are very soft and caramelized. Set aside.
  2. Step 2: Wipe out the pan and add the remaining 2 tablespoons of olive oil to the pan over medium-high heat. Once hot, add the sliced mushrooms and a pinch of salt. Cook, stirring often, for about 5 minutes or until the mushrooms are tender. Set aside.
  3. Step 3: If pre-baking the crust is required before adding the toppings, do so now. After pre-baking, adjust the oven to 450 degrees Fahrenheit.
  4. Step 4: Meanwhile, transfer the cooled caramelized onions to a food processor or blender and pulse a few times until they are finely chopped but not entirely blended. This will be the onion jam layer of the pizza.
  5. Step 5: Assembly time! Spread a thin layer of the onion jam over the pre-baked pizza crust. Then sprinkle the shredded mozzarella or asiago over the onion layer. Next, evenly scatter the sautéed mushrooms and blue cheese crumbles. Place the pizza back in the oven and bake an additional 5 to 7 minutes, or until the cheese has melted.
  6. Serve: Remove the pizza from the oven and sprinkle the arugula all over the top. Drizzle the pizza with truffle oil (or sprinkle with truffle seasoning). Slice and enjoy.
