The Juiciest Turkey Burgers

Turkey burgers, a naturally lean protein source, are notorious for being dry and boring. To keep them extra juicy, use dark meat and don't fiddle with them as they cook so that their natural juices are locked in. Scallion and olive oil add extra moisture, while fresh herbs and garlic add flavor. No eggs, breadcrumbs, or other fillers needed.

Shopping List
- 1 pound(s) 93% lean ground turkey
- 2 scallions, chopped (white and light green parts only)
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley
- 2 tablespoons fresh cilantro
- 2 small garlic cloves, minced
- 1/4 teaspoon freshly ground black pepper
- salt, to taste
Instructions
- Step 1: Heat half of the olive oil in a frying pan over medium high heat. Once hot, add in the scallions and cook until softened, about 1 to 2 minutes. Set aside.
- Step 2: Chop the parsley, cilantro, and garlic with a knife or small food processor.
- Step 3: Place the chopped herb blend into a large bowl with the cooked scallions, remaining olive oil, and all other ingredients. Use your hands or a spatula to mix until just combined.
- Step 4: Wet your hands with water (to prevent sticking) and shape the turkey mixture into about 4 patties, about 1 inch tall.
- Step 5: Heat a lightly oiled frying pan over medium-high heat. Once sizzling hot, add the burgers. Set a timer and cook for 3 minutes per side. Do not fiddle with the burgers while they cook. 20 seconds before the burgers are done, add a splash of water to the pan and cover with a lid. The steam will help cook the burgers all of the way through.
- Serve: Enjoy as is, or with your favorite burger fixings. I like to top mine simply with dijon mustard.
