This homemade energy bar is adapted from the one and only Mary, The Paleo Chef. Each delicious bite is filled with naturally performance-boosting ingredients to power you through your day. The addition of l-glutamine is especially beneficial for muscle recovery post-workout. These are very nutty and a bit dense, so I recommend drinking some water alongside it.

    Bars
  • 2 cups gluten-free oats
  • 1 cup + 2 tablespoons mixed nut or seed butters of choice (Note 1)
  • 33333333/100000000 cup unsweetened shredded coconut
  • 3 scoops plant-based protein powder
  • 1/2 cup dried mulberries
  • 1/2 cup goji berries
  • 6 pitted medjool dates
  • 4 brazil nuts
  • 4 teaspoons l-glutamine powder
  • 4 teaspoons camu-camu powder
  • 2 teaspoons maca
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt Topping (optional)
  • 1/4 cup plant-based white or dark chocolate chips

Instructions
  1. Step 1: Add all ingredients to a high-powered food processor and blend until a dense dough/paste is formed. If it is not blending well, try separating it into batches.
  2. Step 2: Line 1 (8 inch x 8 inch) pan or 2 (8 inch x 4 inch) bread pans with parchment paper. Press the blended bars firmly into the pan(s). Refrigerate or freeze until hardened.
  3. Step 3: Slice into small bars. Keep in mind these are pretty dense, so a small serving is sufficient. To make the optional topping, melt the chocolate until runny and then drizzle the tops of the bars with the chocolate. Refrigerate or freeze until hardened.
  4. Serve: I recommend freezing these bars and pulling on out of the freezer 5 to 10 minutes before eating. Enjoy.

Recipe Notes

Note 1: We like to use a combination of 1/2 cup sunflower butter + 6 tablespoons smooth almond butter + 1/4 cup tahini. The combination of tahini and sunflower butter adds a nice hint of bitterness, but feel free to use whatever combination you prefer.
