An easy shrimp ceviche recipe loaded with fresh shrimp, pineapple, cucumber, tomato, and red onion marinated in lime juice. Quick, flavorful, and no raw fish needed.

Shopping List
  • 1 pound cooked shrimp, peeled and deveined
  • 1/2 cup pineapple, finely chopped
  • 1/2 cup tomato, seeds removed and finely chopped
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup jalapeño, chopped (adjust to taste)
  • 2 tablespoons cilantro, chopped
  • 2 limes
  • 1 lemon
  • salt, to taste

Instructions
  1. Step 1: Chop the shrimp into bite-sized pieces. Slice the cucumber with a mandolin or standard vegetable peeler to make paper thin slice.
  2. Step 2: Place the shrimp, cucumber, pineapple, tomato, red onion, jalapeño, and cilantro in a bowl. Squeeze in the lime and lemon juice. Toss to coat. Cover the ceviche and refrigerate for 30 minutes, up to 8 hours.
  3. Serve: Taste and season with more salt as desired. Serve chilled with tortilla chips if desired. Note: Enjoy the ceviche on the same day you make it, to avoid over-marinating the shrimp and making it tough.
