Roasted Vegetables with Fennel and Pear

Shopping List
  • 4 celery stalks
  • 1 medium fennel bulb, stalks removed
  • 1 medium sweet potato
  • 1 bartlett pear
  • 4 tablespoons extra virgin olive oil (divided)
  • salt and pepper, to taste

Instructions
  1. Step 1: Preheat the oven to 375 degrees Fahrenheit.
  2. Step 2: Chop the celery, fennel, sweet potato, and pear into 1 inch pieces.
  3. Step 3: Toss the diced sweet potato and the fennel with 2 tablespoons of the olive oil. Spread them evenly on a baking sheet and roast for 15 minutes. 
  4. Step 4: Remove the baking sheet from the oven. Add the remaining chopped pear, celery, and 2 tablespoons of olive oil. Season with salt and pepper and stir together with the sweet potato and fennel. Roast for an additional 15 minutes, or until the sweet potato is fork-tender.
  5. Serve: Enjoy warm.
