  • 2 bell peppers (any color)
  • 1 tablespoon olive oil
  • salt, to taste

Instructions
  1. Step 1: Preheat the oven to 420 degrees Fahrenheit.
  2. Step 2: Slice the bell peppers into wedges, about 6 wedges per pepper.
  3. Step 3: Spread the bell pepper on a baking sheet and toss with the olive oil and a little salt. Roast for 16 to 18 minutes, turning over halfway through the cooking time. The pepper should be browned and a bit soft.
  4. Serve: Enjoy! This is great in burrito bowls.
