Shopping List
  • 1 pound fresh asparagus
  • 1/2 cup breadcrumbs or panko (we use instant grain-free breadcrumbs)
  • 1 garlic clove, minced
  • 1 1/2 tablespoons olive oil (divided)
  • 1/2 tablespoon butter, melted (or olive oil)
  • salt and pepper, to taste
  • lemon, for serving

Instructions
  1. Step 1: Preheat the oven to 410 degrees Fahrenheit.
  2. Step 2: In a small bowl, stir together the breadcrumbs, garlic, 1/2 tablespoon olive oil, and melted butter. Season with salt and pepper.
  3. Step 3: Snap off the hard ends of the asparagus (if you bend the asparagus near the base, it will snap right off). Spread the asparagus on a baking sheet and toss with the remaining 1 tablespoon of olive oil. Season with salt and pepper.
  4. Step 4: Line up the asparagus and sprinkle the breadcrumb mixture over the center of the asparagus. Roast for 10 to 12 minutes.
  5. Serve: Top with a squeeze of lemon juice and/or zest. Enjoy.
