Pomegranate Sumac Vinaigrette

This is one of our favorite, unexpected vinaigrettes. Combining traditional elements such as olive oil, vinegar, lemon, and garlic, with more exotic flavors like pomegranate molasses, mint, and sumac, yields a punchy sour-sweet dressing with a hint of Middle Eastern flavor. Don't worry about the lengthier ingredient list, this comes together within minutes. It's delicious over roasted vegetables, salads, and grains.

Shopping List
  • 3 tablespoons grapeseed oil
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon pomegranate molasses (Note 1)
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine vinegar
  • 1 garlic clove, minced
  • 8 fresh mint leaves
  • 2 teaspoons ground sumac
  • 2 teaspoons hot water
  • 1/4 teaspoon salt

Instructions
  1. Step 1: Stir the sumac with the hot water in a small bowl. Let the mixture sit for 10 minutes (this will open up the flavors of the sumac).
  2. Step 2: After 10 minutes, transfer to the sumac mixture to a wide-mouthed mason jar, along with all the other dressing ingredients. Use a stick blender (we like this one) to emulsify the dressing until smooth. Note: You could also whisk the dressing by hand if the mint is chopped into very small pieces. Refrigerate.
  3. Step 3: Enjoy. This is great with Roasted Beets and Jungle Salad.

Recipe Notes

Note 1: Pomegranate molasses is a traditional ingredient in Middle Eastern cooking. It consists of pomegranate juice that has been reduced down, with or without sugar, to a thick syrup. Many grocery stores carry pomegranate molasses in the international aisle. If you can't find it, pomegranate molasses may be substituted with cranberry juice concentrate or syrupy balsamic vinegar with a pinch of added sugar. Homemade pomegranate molasses can be made by cooking down pomegranate juice on a low simmer, until it reaches a molasses-like consistency.
