Peanut Pretzel Chocolate Bites

Crunchy, creamy, salty, and chocolatey. These 15-minute pretzel bites are a peanut-filled dream come true. Simply stir together an easy 4-ingredient nutty filling, sandwich it between pretzels, and then dunk it in chocolate. Enjoy.

  • 26 gluten-free pretzels
  • 1/4 cup smooth runny peanut butter (Note 1)
  • 3 tablespoons coconut flour
  • 1 tablespoon maple syrup
  • 1 tablespoon coconut oil, melted Chocolate Dip (optional)
  • 1/4 cup plant-based chocolate chips
  • 1 tablespoon coconut oil

Instructions
  1. Step 1: Stir together the peanut butter, coconut flour, melted coconut oil, and maple syrup in a small bowl. Refrigerate for at least 5 minutes to firm up.
  2. Step 2: Scoop heaping 1 teaspoon dollops of the peanut 'dough' and roll them into small balls with your hands. Sandwich the dough ball lightly between two pretzels. Repeat this process with all of the remaining pretzels.
  3. Step 3: For the chocolate dip, melt together the chocolate chips and coconut oil until liquid and smooth (you can use a microwave or double boiler for this). If using a microwave, heat and stir the chocolate in 20 second increments to avoid burning. Half dip the pretzel bites into the chocolate mixture and let cool on a wire rack or silicon mat. Place something underneath to catch any drips.
  4. Serve: Refrigerate or freeze to harden. Enjoy.

Note 1: No peanut butter? Try substituting with almond or sunflower butter.
