This Pea and White Bean Dip is super creamy and delicious. Made with a blend of frozen peas, white beans, tahini, lemon, olive oil, and roasted garlic.

Shopping List
  • 1 (15 ounce) can white beans (such as cannellini, navy, or butter beans)
  • 1 1/2 cups defrosted peas
  • 1/2 cup tahini (Note 1)
  • 6 tablespoons fresh lemon juice
  • 4 tablespoons extra-virgin olive oil
  • 4 tablespoons water
  • 1 head(s) garlic
  • 1 teaspoon salt
  • black pepper, to taste

Instructions
  1. Step 1: Preheat the oven to 400 degrees Fahrenheit.
  2. Step 2: Use a sharp knife to slice off the top of the head of garlic to expose some of the cloves inside. Place each garlic head on a piece of foil and drizzle the clove tops with a little olive oil. Wrap the garlic in the foil to form a small packet. Place the foil packet(s) in the oven for 30 to 35 minutes, or until the cloves are lightly browned and fork-tender.
  3. Step 3: Squeeze out 6 cloves of garlic and place in a food processor or blender (reserve the rest of the garlic for spreading on toast or mixing into pasta). Add the white beans, peas, tahini, olive oil, water, and salt. Blend until super creamy. Taste and adjust seasonings as desired.
  4. Serve: Spread on toasts, sandwiches, or crackers. Leftovers freeze well.
