Shopping List
  • 8 ounces firm white fish (such as swordfish, halibut, or mahi-mahi)
  • 6 ounces pasta (such as penne or farfalle)
  • 1 cup cherry tomatoes
  • 2 garlic cloves, sliced
  • 3 tablespoons extra-virgin olive oil
  • 2 heaping tablespoons white wine
  • salt and red pepper flakes, to taste
  • chopped parsley, for topping

Instructions
  1. Step 1: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente. Drain.
  2. Step 2: Dice the fish into 1-inch pieces.
  3. Step 3: While the pasta cooks, heat the olive oil in a skillet over medium heat. Add the sliced garlic and cook for 1 to 2 minutes. If the garlic starts to brown too quickly, lower the heat.
  4. Step 4: Add the diced fish and whole cherry tomatoes. Cook for 2 to 3 more minutes, stirring occasionally.
  5. Step 5: Pour in the wine and 1/4 teaspoon salt. Simmer for 3 minutes.
  6. Serve: Toss the cooked pasta with the sauce, sprinkle with parsley, and red pepper flakes. Enjoy.
