Nonna's Easy Tomato Sauce

This very simple recipe is coming to you straight from a Sicilian grandmother's kitchen. This does not make a thick, red-style sauce like you would find in an Italian-American restaurant. Rather, it makes a light and refreshing tomato sauce using just fresh tomatoes, olive oil, basil, and a bit of salt and pepper. Try it in Pasta with Fried Eggplants, over grilled fish, or mixed with cooked greens.

Shopping List
  • 2 1/2 cups cherry tomatoes, quartered (350 grams)
  • 1/2 cup fresh whole basil leaves
  • 2 tablespoons extra virgin olive oil
  • 3/4 teaspoon salt
  • red pepper flakes, to taste

Instructions
  1. Step 1: Heat a large frying pan over medium heat. Add the tomatoes and cook until softened, stirring frequently and squishing the tomatoes down with a fork. This should take about 10 to 15 minutes. If the tomatoes are browning too quickly, lower the heat.
  2. Step 2: Once soft and sauce-like, turn off the heat. Add the olive oil, pepper flakes, salt, and fresh basil leaves. The residual heat of the sauce will naturally wilt the leaves.
  3. Serve: Enjoy tossed with pasta, over fish, or anywhere else that could use a light pasta sauce. Leftovers freeze well.
