How to: Roast Garlic

Roasted, caramelized garlic cloves add rich flavor to your favorite dishes and are a breeze to prepare. The roasted cloves turn into a soft pulp that can be spread over toasts, tossed into pastas, meatballs, or simply eaten as is. Roasting garlic concentrates the natural sugars, removing much of the abrasiveness of raw garlic. It’s also been shown to be easier to digest for many people who have trouble with raw garlic.

Shopping List
  • 1 head(s) garlic
  • 2 teaspoon olive oil

Instructions
  1. Step 1: Preheat the oven to 400°F.
  2. Step 2: Use a sharp knife to slice off the top of the head(s) of garlic to expose some of the cloves inside. Place each garlic head on a piece of foil and drizzle the clove tops with the olive oil. Wrap the garlic in the foil to form a small ball. Place the foil packet(s) in the oven for 30 to 35 minutes, or until the cloves are lightly browned and fork-tender.
  3. Serve: Unwrap the garlic and allow the steam to escape. Squeeze out the soft cloves to use in your favorite recipes, or simply smear over toasted bread. This is also great in Garlic Spaghetti Squash with Broccolini and Simple Turkey Meatballs.

Recipe Notes

Note 1: Extend the life of the roasted garlic by submerging the cloves in olive oil in an airtight container in the fridge for 7 to 10 days.
