A filling and tasty breakfast bowl that's loaded with protein from black beans, scrambled eggs, and juicy chicken.

Shopping List
  • 1 boneless and skinless chicken breast
  • 1 cup black beans
  • 3 large eggs
  • 1/2 large avocado, sliced
  • 1 roma tomato, diced
  • 1 small handful romaine, chopped (optional)
  • 1 tablespoon olive oil or avocado oil
  • 1/2 tablespoon butter
  • 1 1/2 teaspoons taco seasoning or all-purpose seasoning
  • salt and pepper, to taste

Instructions
  1. Step 1: Slice the chicken breast in half lengthwise to make thinner breasts. Season with the taco seasoning (or other seasoning), salt, and pepper.
  2. Step 2: In a skillet, heat the oil over medium-high heat. Add the chicken and cook for 3 to 4 minutes per side, or until cooked through. Remove from heat and set aside.
  3. Step 3: Heat the butter in the skillet over medium heat. Scramble (or fry) the eggs in the pan to your liking.
  4. Serve: Build each bowl with the black beans, eggs, sliced chicken, avocado, diced tomatoes, and optional romaine. Season with olive oil, salt, and pepper (yes, hot sauce is also great on here). Enjoy.
