Easy Baked Sweet Potato Fries

The easiest baked sweet potato fries to satisfy those french fry cravings. There's no complicated steps here: slice a sweet potato, toss in olive oil, bake at high heat, and eat. These won't be like your traditional 'crunchy' deep-fried french fry, but they will still be delicious - especially when dunked into your favorite creamy dip and served alongside a nice veggie burger.

Shopping List
  • 1 pound sweet potato (about 2 medium-sized potatoes)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon favorite seasoning (I love homemade taco seasoning)
  • salt and pepper, to taste

Instructions
  1. Step 1: Preheat the oven to 410°F. Rinse and scrub the sweet potatoes until clean. There is no need to peel. Use a sharp knife to cut the sweet potatoes into french-fry shaped batons or thin wedges. Try not to cut them too thin, since they will cook down while cooking.
  2. Step 2: Toss the sliced potatoes with the oil, seasoning, salt, and pepper. Spread evenly on a large baking sheet. If there is not enough space, use an additional baking sheet to avoid overcrowding (otherwise they will steam rather than sear).
  3. Step 3: Roast the sweet potatoes for 20 to 25 minutes, or until cooked all the way through. Flip the fries over halfway through the cooking time.
  4. Serve: Sprinkle with some extra salt and enjoy! My favorite way to enjoy these is dipped into a mayonnaise/ketchup combination or with Vegan Caesar Dressing.
