One bite of this salad takes me right back to my college years in New York City. Every week, I used to buy a tub of the famous carrot and ginger dressing at (the now closed) Dojo restaurant and use it to prepare this very simple salad recipe. It's a quick combination of greens, beets, carrots, and avocado with a generous drizzle of carrot ginger dressing. Turn this salad into a meal with the addition of grilled chicken, salmon, or your favorite veggie burger.
