Dill-Tahini Chicken Salad

A great chicken salad recipe should be easy to assemble and richly textured. This one checks both of those boxes. Tender chicken combines beautifully with juicy grapes, crunchy walnuts, and aromatic dill. A creamy herbed tahini sauce stands in for mayonnaise, and gives velvety sesame flavor and additional nutrients. Serve this in sandwiches (especially pita bread), broad-leafed lettuce cups, or piled high onto salad greens. For a quicker prep time, rotisserie chicken may be used in place of poached chicken.

    Chicken Salad
  • 12 ounces poached chicken breasts (Note 1)
  • 3/4 cup seedless grapes, halved
  • 1/2 cup walnuts, chopped
  • 1/4 cup fresh dill
  • 3 scallions, chopped (or 1/4 cup red onions)
  • Dill-Tahini Sauce, to taste (recipe below)
  • salt & pepper, to taste Dill-Tahini Sauce
  • 1/2 cup fresh dill, chopped
  • 1/4 cup tahini (Note 2)
  • 1 lemon, juiced
  • 1/4 cup water
  • 3 tablespoons extra-virgin olive oil
  • 1 garlic clove
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together sauce ingredients, except the water, in a small mixing bowl. Then add the water, 1 tablespoon at a time, until a thick but pourable consistency is reached. This will vary depending on your particular tahini. Set aside.
  2. Step 2: Dice the cooked chicken into 1 inch pieces. Combine all chicken salad ingredients in a large bowl. Pour in about half of the prepared tahini sauce and toss to coat. Add additional sauce as desired.
  3. Serve: Enjoy chilled or at room temperature in lettuce wraps, over salad, or on its own.

Recipe Notes

Note 1: 12 ounces of poached chicken breasts may be substituted with 12 ounces of rotisserie chicken.

Note 2: A good tahini can make a world of difference in how this recipe turns out. The texture and flavor depends on the type of sesame seed used, the roast level, and how those seeds are processed. Look for a tahini that's light in color and very runny. It should taste rich and slightly sweet, not at all abrasive.
