Homemade Crispy Tofu Nuggets — made in an air fryer or pan! If you do eat eggs, the plant-based egg wash can be substituted with 1 beaten egg.

Shopping List
  • 1 (14 ounce) block extra firm tofu
  • 3/4 cup crumbs of choice (Note 1)
  • 1/4 cup non-dairy milk
  • 1/4 cup all purpose flour (or gluten-free blend)
  • 2 tablespoons arrowroot or cornstarch
  • 1 tablespoon dijon mustard
  • 1/8 teaspoon EACH onion powder, garlic powder, and cayenne
  • salt and pepper, to taste
  • high-heat cooking spray

Instructions
  1. Step 1: Drain the tofu and press the water out by wrapping the tofu block in paper or clean reusable towels and setting a heavy pan on top of it. Press for 10 minutes.
  2. Step 2: Cut the tofu slabs into nugget-sized pieces (about 6 to 9 pieces per block).
  3. Step 3: Stir together the milk, flour, and mustard in a bowl until smooth. Season with salt and pepper. This batter will act as the plant-based 'egg' wash. Set aside.
  4. Step 4: Place the arrowroot or cornstarch on a small plate. Pour the crumbs into another plate. Create your assembly line with the cut tofu, starch plate, batter bowl, and crumb plate.
  5. Step 5: Coat the tofu in the arrowroot. Then smear the tofu on all sides with the batter. It will be quite thick, so remove any excess until it is a thin layer. Next, coat the tofu on all sides with the crumbs. Press in any crumb gaps with your hands (it doesn't need to be perfect). Place the breaded tofu in the air fryer basket. Repeat with all the remaining tofu. Add more crumbs if needed.
  6. Step 6: Preheat the air fryer to 390 degrees Fahrenheit. Spray the tofu with cooking spray and then place the basket in the air fryer. Cook for 8 to 9 minutes, flipping the tofu over with tongs halfway through the cooking time. Note: Don't have an air-fryer? You can pan-fry these in a thin layer of avocado oil until golden on all sides.
  7. Serve: Enjoy immediately with your favorite dip.

Recipe Notes

Note 1: To make your own crumbs, you can blend up grain-free crackers (we like Simple Mills), pretzels (our favorite option), or plantain chips in a food processor until it reaches a coarse crumb texture.
