Cranberry White Chocolate Granola Bars

Shopping List
  • 2 cups gluten-free oats
  • 2 cups puffed rice cereal
  • 33333333/100000000 cup runny honey (or brown rice syrup)
  • 33333333/100000000 cup dried cranberries
  • 1/4 cup white chocolate chips
  • 1/4 cup coconut oil
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 2 tablespoons coconut sugar
  • 2 tablespoons smooth almond or sunflower butter
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt

Instructions
  1. Step 1: Line 1 (8 in. x 8 in.) pan(s) with parchment paper (or use 2 bread tins). Leave some parchment hanging over the sides of the pan. The flaps will help lift the bars out of the pan.
  2. Step 2: Combine the oats, puffed rice, sunflower seeds, pumpkin seeds, dried cranberries, vanilla, and salt in a large mixing bowl.
  3. Step 3: In a small saucepan, heat the honey, oil, and sugar over medium heat. Stir frequently, it should take less than a minute for the mixture to simmer. Allow the frothy honey mixture to simmer 15 seconds, stirring constantly.
  4. Step 4: Remove the honey mixture from the heat and stir in the nut butter. Stir until smooth and no large lumps remain. If it seems a bit lumpy, heat the honey mixture again for 15 seconds at a time until it thins out.
  5. Step 5: Pour the warm honey mix over the oat mix. Stir everything together (it will be sticky). Transfer into the parchment-lined pan. Sprinkle the chocolate chips over the top. Place an extra sheet of parchment on top and use it to press down evenly on the bars, pressing the chocolate chips in.
  6. Step 6: Refrigerate for 2 or more hours. When firm, place on a cutting board and lift out the bars using the parchment flaps. It should pop right out. Cut into bars.
  7. Serve: Enjoy. We recommend storing the bars in the freezer and enjoying them slightly chilled for that chewy bite.

Recipe Notes

Note 1: Brown rice syrup will yield hold these bars together better than maple syrup. In a pinch however, maple syrup may be used.
