Chicken and Ham Involtini (Rollups)

Baked lightly breaded chicken cutlets filled with melty cheese and ham. Roll it up, slice, secure with a toothpick, and then bake. Delicious and fun to eat alongside roasted vegetables or salad.

Shopping List
- 1 pound chicken breast cutlets
- 2 1/2 ounces finely-ground breadcrumbs (we use grain-free)
- 3 tablespoons extra-virgin olive oil (plus more for drizzling)
- 2 tablespoons parmigiano reggiano, grated
- 2 tablespoons fresh parsley, chopped
- 3 slices cooked ham
- 3 slices mozzarella, provolone, or swiss cheese
- salt and pepper, to taste
- lemon, for serving
Instructions
- Step 1: Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Step 2: Slice the chicken into thin 1/4 inch cutlets. Beat with a meat tenderizer if needed.
- Step 3: Stir together the breadcrumbs, parmigiano, and parsley. Season with a little salt and pepper. Spread the crumb mix onto a plate. Pour the olive oil into a separate plate.
- Step 4: Rinse and pat the chicken cutlets dry, you should have about 3 to 4 cutlets. Coat the chicken cutlets on both sides (generously) with the olive oil. They should be quite slick, but not dripping.
- Step 5: Place the oiled chicken onto the breadcrumb plate and coat on both sides. Place the breaded chicken on a large cutting board or plate. Repeat with the remaining chicken, adding more crumbs or olive oil as needed.
- Step 6: Top each breaded cutlet with ham and cheese. The fillings should run along most of the length, but don't need to cover the entire cutlet. Roll up each cutlet into a log, tucking the ham and cheese fillings back towards you as you roll. Secure with toothpicks. Don't worry if anything spills out, just tuck it back into the log. Slice each log into 1/2 inch slices. It should make a pinwheel shape. Place the chicken onto the lined baking sheet. Drizzle with any leftover olive oil.
- Step 7: Bake for 20 to 22 minutes, depending on the thickness of the slices. Flip over halfway through baking.
- Serve: Enjoy with a squeeze of lemon.
