Chai Chocolate Chip Cookies

These cookies are all about mouthfeel: thick, chewy, and somehow dense and soft at the same time. This recipe, which is adapted from Yvonne's Vegan Kitchen, is an ode to that addictive texture and hint of exotic spice. Each bite is laced with warming notes of cardamom, cloves, and ginger. If you're a true spice lover, add an extra little bit of the spice blend to really bring out the chai flavor.

  • 1/2 cup coconut sugar
  • 1/2 cup chocolate chips
  • 1/4 cup coconut oil, melted
  • 2 tablespoons water
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt Spice Blend
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Instructions
  1. Step 1: Preheat the oven to 350°F.
  2. Step 2: Place the water and the spice blend in a small, microwaveable bowl. Stir to combine. Heat the spiced water mixture in a microwave until very warm, about 15 to 30 seconds. Set aside and allow the water blend to steep, it should smell very fragrant. If you prefer not to use a microwave, you can follow the same steps with a small saucepan over medium heat.
  3. Step 3: In a bowl, mix together the wet ingredients: melted coconut oil, vanilla, and the water blend. In a separate bowl, stir together the garbanzo flour, sugar, baking powder, and salt. Add the dry ingredients to wet ingredients and stir to combine. Fold in the chocolate chips.
  4. Step 4: Refrigerate the batter for 10 minutes. This will help keep the cookies tall and chewy.
  5. Step 5: Scoop out the chilled batter onto a parchment-lined baking sheet. It should be a very thick batter. Each cookie ball should measure about 3 tablespoons. Press down the cookies slightly, keeping them about 1" inch tall.
  6. Step 6: Bake the cookies for 10 minutes. Remove from the oven, let cool slightly, and then carefully transfer to a cooling rack.
  7. Serve: Enjoy these cookies warm or chilled for an extra chewy bite. Perfect alongside some cold non-dairy milk.

  • 3 tablespoons coconut flour
  • 3/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 5 tablespoons smooth tahini or almond butter (Note 1)
  • 1/4 cup coconut oil, softened but not entirely melted
  • 1 egg or flax egg (Note 2)
  • 1/2 teaspoon vanilla extract Spice Blend
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger

Instructions
  1. Step 1: In a mixing bowl, stir together the almond flour, coconut flour, spice blend, baking soda and salt. Set aside.
  2. Step 2: In a large mixing bowl with an electric hand mixer, beat together the softened oil, sugar, tahini/almond butter and vanilla extract at medium speed until well combined, about 1 minute. The coconut oil may make this look quite greasy, but it will firm up later.
  3. Step 3: Add the egg and beat on low and mix until just incorporated. Carefully stir in the flour mixture and until just combined. Fold in the chocolate chips. Place the bowl in the refrigerator for 30 minutes, or until the dough is firm. At this point, the dough could also be frozen and cooked directly from frozen (adding on a few minutes of cooking time as needed).
  4. Step 4: Preheat the oven to 350°F.
  5. Step 5: Scoop out the chilled batter onto a parchment-lined baking sheet. It should be a very thick batter. Each cookie ball should measure about 3 tablespoons. Press down the cookies slightly, keeping them about 1" inch tall.
  6. Step 6: Bake the cookies for 10 to 12 minutes, or until not gooey. Remove from the oven. Do not handle immediately - they will be very soft. Leave the cookie sheet on a cooling rack and allow the cookies to continue cooking slightly as they cool on the cookie sheet.
  7. Serve: Enjoy these cookies warm or chilled for an extra chewy bite. Perfect alongside some cold non-dairy milk.

Recipe Notes

Note 1: Choose a nut or seed butter that has only one or two ingredients, no added oils or sweeteners. If using tahini, taste it beforehand - some tahini brands can have a bitter taste that would be unpleasant in these cookies.

Note 2: To make 1 flax egg, combine 1 tablespoon of ground flax meal with 2.5 tablespoons of cold water. Place in the refrigerator for 5 minutes, or until it reaches a gel-like consistency.
