Cashew Pepper Cheese Sauce - Bravabod

An ultra creamy and delicious 10-minute vegan cashew cheese sauce made with only 5 simple ingredients. The addition of roasted bell pepper and canned chipotle pepper gives this easy cheesy sauce a big boost of flavor and spice.

Shopping List
  • 1 cup raw cashews (Note 1)
  • 1/2 cup water
  • 1/2 roasted red bell pepper (best with homemade)
  • 1 chipotle pepper, packed in adobo sauce (use half for mild)
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon salt

Instructions
  1. Step 1: Add all ingredients to a high-powered blender. Blend until super smooth and creamy, scraping down the sides as needed. Taste and adjust seasonings to your taste preference.
  2. Serve: This cashew cheese sauce makes a great tortilla dip, mac and cheese sauce, or creamy sauce for mushroom tacos. It's also great in baked vegetable casseroles.

Recipe Notes

Note 1: If using a high-powered blender, such as a Vitamix, then I've found there is no need to soak the cashews beforehand. If you don't have a high-powered blender, try soaking the cashews in warm water for 30 minutes beforehand. Drain and rinse the soaked cashews before blending.
