Candied Orange Quinoa! Fluffy quinoa combined with candied orange peels, almonds, pumpkin seeds, and fresh herbs in a simple honey vinaigrette. Delicious and easy.

Shopping List
  • 2 cups cooked quinoa
  • 1/2 cup fresh parsley, chopped
  • 33333333/100000000 cup candied orange peel, chopped (we use these, Note 1)
  • 1/4 cup almonds, chopped
  • 1/4 cup pumpkin seeds
  • 3 tablespoons shallot, minced
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • black pepper, to taste

Instructions
  1. Step 1: Cook or defrost the quinoa according to package directions. For reference, 1 cup of dry quinoa makes about 2.5 cups of cooked quinoa.
  2. Step 2: Whisk together the olive oil, lemon juice, honey, salt, and pepper. Set aside.
  3. Step 3: Combine all remaining ingredients in a large bowl. Pour in the vinaigrette and toss to combine.
  4. Serve: Enjoy this quinoa salad warm or chilled. It's a perfect accompaniment to Honey Dijon Chicken Thighs and/or Roasted Root Vegetables with Honey Dijon.
