Baked Chicken Parmesan

Healthy Baked Chicken Parmesan with an easy olive oil and breadcrumb coating and topped with warm tomato sauce and melted cheese. This lightened-up and easy chicken parmesan will be your new favorite.

Shopping List
- 2 large boneless skinless chicken breasts
- 1/2 cup breadcrumbs (we use instant grain-free breadcrumbs)
- 2 tablespoons grated parmesan cheese (dairy or non-dairy)
- 2 tablespoons olive oil
- 1 cup tomato sauce (store-bought or homemade)
- 1/2 cup shredded mozzarella (dairy or non-dairy)
- chopped parsley, for topping
Instructions
- Step 1 : Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Rinse and pat the chicken dry. Slice each breast in half vertically to make 4 thinner cutlets.
- Step 3: Stir together the breadcrumbs and parmesan in a plate. Season with a little salt and pepper, if needed.
- Step 4: Prepare an assembly line with the sliced chicken, olive oil in a plate, and crumb plate. Coat the chicken cutlets on all sides in the olive oil, then coat it on all sides with the seasoned breadcrumbs. Transfer the breaded chicken to a parchment-lined baking sheet. Repeat with remaining chicken, adding more crumbs onto the plate if needed.
- Step 5: Spoon the sauce over the top of the chicken and sprinkle with the cheese. Bake for 20 to 22 minutes, or until the cheese has melted and the chicken is cooked through.
- Serve: Transfer onto plates, top with parsley, and enjoy.
