Shopping List
    For the Salad
  • 4 large handfuls arugula
  • 2 oranges, segmented
  • 2 ounces goat cheese
  • 1/2 cup dried cranberries
  • 6 tablespoons sunflower seeds For the Citrus Balsamic
  • 33333333/100000000 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 1/2 tablespoons orange juice
  • 1 tablespoon honey
  • 1/2 tablespoon dijon mustard
  • 1 teaspoon orange zest
  • 1 garlic clove, minced
  • salt and pepper, to taste

Instructions
  1. Step 1: Stir together the Citrus Balsamic ingredients. Refrigerate.
  2. Step 2: To segment the oranges, first slice off the top and bottom of each orange with a sharp knife. Prop the orange up on the flat bottom and slice away the rest of the peel with the knife in a downward motion, including the white pith. Next, cut between the membranes to remove the individual orange wedges.
  3. Step 3: Toss the arugula in a small splash of the prepared vinaigrette. Top with the orange segments, goat cheese, cranberries, and sunflower seeds.
  4. Serve: Enjoy with extra vinaigrette on the side.
