5-Ingredient Zucchini Soup

Here's a creamy, feel-good soup made with only a handful of ingredients. The oft-discarded carrot tops are the surprise element here. When blended, the green tops are visually unnoticeable, but they add a touch of pleasant earthiness and density to the soup. Not to mention they're a nutrient powerhouse at a fraction of the price.

Shopping List
  • 6 cups salted vegetable broth
  • 5 large zucchini, chopped
  • 4 cups carrot tops, chopped (Note 1)
  • 1 brown onion, diced
  • 2 tablespoons olive oil
  • salt and pepper, to taste

Instructions
  1. Step 1: Heat the oil over medium-high heat in a pot. Add the onion and cook until soft, about 5 minutes, stirring frequently. Add the zucchini, carrots tops, and broth. Bring to a boil over medium-high heat.
  2. Step 2: Once boiling, lower the temperature to medium and cook until the zucchini becomes very soft, about 20 to 25 minutes.
  3. Serve: Allow soup to cool, then puree until silky smooth. Taste and add salt and pepper as desired. Enjoy with some crusty bread, crackers, or a tasty sandwich.

Recipe Notes

Note 1: 4 cups of carrot tops is equal to about 1 large bunch of carrots. Discard any tops that are yellowed or feel slimy. If you can't find carrot tops, they can be omitted.
