It should taste rich and slightly sweet, not at all bitter. Any leftover tomato-tahini sauce makes a great dip for falafels, roasted vegetables, or sandwiches.

    Tomato Tahini Sauce
  • 33333333/100000000 cup runny tahini
  • 1/4 cup oil-packed sun-dried tomatoes
  • 1/4 cup water
  • 1 medium tomato
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder (optional) Pasta
  • 8 ounces dry pasta of choice (cooking liquid reserved)
  • fresh basil, to taste (optional)

Instructions
  1. Step 1: Blend all of the Tomato Tahini Sauce ingredients, including some of the oil packed with the sun-dried tomatoes, with a food processor or immersion blender until smooth. Add more oil from the sun-dried tomatoes as needed to reach your desired consistency. Remove 3/4 cup of the prepared sauce, reserving any leftover sauce in the refrigerator for later use.
  2. Step 2: Cook the pasta according to package instructions. Before draining, reserve 1 mug of the starchy pasta water and set aside. Drain the pasta, toss with a bit of oil, and transfer to a serving bowl.
  3. Step 3: Add the reserved 3/4 cup of prepared Tomato Tahini Sauce, optional basil, and a splash of the starchy pasta water. Stir to combine, adding additional pasta water as needed to reach desired consistency (I use about 1/4 cup of starchy pasta water).
  4. Serve: Plate your pasta and enjoy.

  • 5 medium to large zucchini (Note 1)
  • 1 tablespoon olive oil
  • fresh basil, to taste (optional)

Instructions
  1. Step 1: Blend all of the Tomato Tahini Sauce ingredients, including some of the oil packed with the sun-dried tomatoes, with a food processor or immersion blender until smooth. Add more oil from the sun-dried tomatoes as needed to reach your desired consistency. Remove 3/4 cup of the prepared sauce, reserving any leftover sauce in the refrigerator for later use.
  2. Step 2: Meanwhile, use a spiralizer or a standard vegetable peeler to make the zucchini noodles. If using a vegetable peeler, cut off the top stems and peel the zucchini lengthwise. Peel in one long motion, making a thin fettuccine-style noodle. Continue peeling the zucchini, rotating it to different sides as you do so. Once you reach the center, it will be too wet to peel. Chop these inner core pieces and cook them alongside the zucchini noodles.
  3. Step 3: Heat the oil in a large pan on medium heat. Add all of the zucchini noodles and toss them for 1 to 3 minutes, just until they begin to soften and lose their volume.
  4. Step 4: Add the reserved tahini sauce, optional basil, and a little splash of water to the zucchini. Stir to combine, adding additional water as needed to loosen the sauce and reach desired consistency. Once combined, remove from the heat.
  5. Serve: Plate your pasta and enjoy.

Recipe Notes

Note 1: Other low-carb vegetable pasta options include hearts of palm noodles, cooked spaghetti squash, and soaked kelp noodles. Use 4 servings of any of these options in place of the zucchini noodles, if desired.
