10-Minute Creamed Spinach

If you have frozen spinach on hand, this recipe is a wonderful way to transform it into the classic steakhouse-style side dish. This version is made with just a few simple ingredients and one pan. The result is a creamy spinach dish that is less decadent than the original, but just as satisfying and ready in minutes.

- 1 (16 ounce) bag frozen spinach, thawed
- 1 cup non-dairy milk
- 1/4 cup non-dairy cream cheese
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- cayenne pepper, to taste
- squeeze of lemon (optional, for serving)
Instructions
- Step 1: Use paper towels or a mesh strainer to squeeze the excess liquid from the spinach.
- Step 2: Heat the oil in a wide frying pan over medium-high heat. Once hot, add the garlic and cook for 30 seconds, stirring frequently. Add the drained spinach, salt, spices, milk, and cream cheese. Cook for 2 to 3 minutes, stirring often, or until the spinach is creamy and smooth. Taste and add additional cream cheese and/or milk as needed to reach desired consistency.
- Serve: Add a squeeze of optional lemon juice and enjoy.
