Dill-Butter Baked Salmon

Tender salmon roasted with dill-butter, salt, pepper, and a hint of garlic. Preparing the compound butter takes only a few minutes and can be modified to use whatever fresh herb you prefer. This crowd-pleasing salmon is perfectly flakey, with a hint of savory butter in every bite.

    Salmon
  • 1 pound salmon (cut into fillets)
  • garlic powder, to taste
  • salt and pepper, to taste
  • cooking oil, to taste Compound Butter
  • 3 tablespoons grass-fed butter or ghee, softened
  • 1/2 lemon, zested
  • 2 teaspoons fresh dill, chopped (basil is also good)
  • 1 teaspoon lemon juice

Instructions
  1. Step 1: Mix together all of the Compound Butter ingredients in a small bowl until uniform. Place on a piece of parchment paper or plastic wrap and roll into a log. Twist the ends to seal. Freeze or refrigerate until firm.
  2. Step 2: Set the oven to 400°F. Place an oven-proof pan (such as cast-iron) in the oven to preheat.
  3. Step 3: Spray or lightly coat high-heat cooking oil over the tops of the salmon fillets. Place the salmon carefully on the preheated pan, it should sizzle on contact. Sprinkle the salmon with the garlic, salt, and pepper. Thinly slice half of the compound butter roll and evenly place the slices over the tops of the salmon.
  4. Step 4: Roast the salmon for 8 to 10 minutes (adjust the time as needed for the thickness of the filet). Broil the salmon for 1 to 2 minutes.
  5. Serve: Enjoy the salmon warm, with extra compound butter served on the side. Extra butter can be frozen for future use. This goes well with Sautéed Bell Pepper and Celery.
