              Quinoa, Tomato and Avocado Salad

A simple and nourishing 10-minute salad with fluffy quinoa, avocado, tomato, greens, pine nuts, and a dollop of hummus. Drizzle with olive oil and enjoy.

Shopping List
- 1 cup cooked quinoa
 - 2 handfuls arugula
 - 1 large roma tomato, diced
 - 1 avocado, diced
 - 1/2 cup hummus (store-bought or homemade)
 - 1/4 cup toasted pine nuts
 - extra-virgin olive oil, to taste
 - salt and pepper, to taste
 
Instructions
- Step 1: Cook or defrost the quinoa according to package directions.
 - Step 2: Heat a dry frying pan over medium heat and add the pine nuts. Toast for 2 minutes, or until the pine nuts are lightly golden and fragrant. Shake the pan often to avoid burning. Set aside.
 - Step 3: Place the arugula in a bowl and drizzle lightly with olive oil. Season with salt and pepper and set aside.
 - Serve: Build each plate with the arugula, quinoa, chopped tomatoes, avocado, toasted pine nuts and a big dollop of hummus. Drizzle with olive oil and season with salt and pepper as desired. Enjoy.
