Quinoa and Peach Salad with Basil Vinaigrette

Shopping List
    Salad
  • 2 cups cooked quinoa
  • 2 cups watercress, cleaned and chopped
  • 1/2 red bell pepper, diced into small pieces
  • 2 scallions, chopped (white and light green parts only)
  • 1/2 large avocado, diced
  • 1 large peach, diced (Note 1)
  • 1 tablespoon fresh parsley or basil, chopped (optional) Vinaigrette
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 teaspoons champagne vinegar (or another mild vinegar)
  • 1/4 teaspoon dried basil
  • salt and pepper, to taste

Instructions
  1. Step 1: Whisk together all vinaigrette ingredients in a small bowl. Set aside.
  2. Step 2: Combine all salad ingredients. Pour in the vinaigrette, to taste, and toss to coat.
  3. Serve: Enjoy at room temperature or chilled.

Recipe Notes

Note 1: Peaches may also be substituted with nectarines, plums, or apricots.
