Loaded Greek Salad - Bravabod

This salad is a bit of a choose your own adventure. At its base are juicy tomatoes, cucumbers, bell pepper, and salty olives tossed with a tangy herb vinaigrette. From there, you have the option to add in chickpeas, red onion, and/or feta cheese. Warm brown rice also makes a welcome option. Whichever route you choose, the end result is a refreshing, healthy, and very easy to make salad.

    Base
  • 1 long english cucumber, chopped
  • 2 roma tomatoes, chopped
  • 1/2 cup pitted olives, sliced
  • 1 red bell pepper, diced
  • Herb Vinaigrette, to taste (recipe below) Add-Ins (Optional)
  • 1 (15 ounce) can of chickpeas, drained and rinsed
  • 2 cups cooked brown rice, warmed (Note 1)
  • 1/2 cup feta cheese
  • 1/4 cup red onion, chopped Herb Vinaigrette
  • 66666667/100000000 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Italian seasoning blend (Note 2)
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
  1. Step 1: Whisk together the vinaigrette ingredients until smooth. Set aside.
  2. Step 2: Combine the desired salad ingredients. Pour in the Herb Vinaigrette, to taste. Toss to coat.
  3. Serve: Enjoy as a refreshing side salad or light plant-based meal.

Recipe Notes

Note 1: Frozen steam-able packs of brown rice are a great timesaver here.

Note 2: Use a pre-made Italian seasoning blend, or make your own by combining the following: 1 tablespoon dried oregano, 1 tablespoon dried basil, 1 teaspoon dried thyme, 1 teaspoon dried rosemary, 1 teaspoon garlic powder, 1/4 teaspoon onion powder. Don't worry if you're missing one or more spices, just make up for it with a bit more of the others.
