Creamy Walnut Sauce

This creamy sauce is made without any dairy, thanks to the natural texture of blended walnuts, caramelized onions, olive oil, spices, and a splash of non-dairy milk. Use this as a heart-healthy sauce for pastas, pizzas, and even sandwiches. It also makes a wicked dip for pita and chips.

    Walnut Sauce
  • 1 cup raw walnuts
  • 33333333/100000000 cup extra-virgin olive oil
  • 1/4 cup non-dairy milk
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder Caramelized Onions
  • 1/2 large brown onion, peels & thinly sliced
  • 1 tablespoon extra-virgin olive oil

Instructions
  1. Step 1: Our first step is to make the caramelized onions. Heat 1 tablespoon of olive oil in a wide frying pan over medium heat. Once hot, add the sliced onion and cook until caramelized and tender, about 20 to 25 minutes. For more detailed instructions on how to caramelize onions, check out this post.
  2. Step 2: Once the onions are caramelized, measure out 1/3 cup of the caramelized onions for the sauce recipe. Store any extra caramelized onions in the refrigerator.
  3. Step 3: Combine the 1/3 cup of caramelized onion, along with all remaining sauce ingredients in a high-powered blender or food processor. Blend until very smooth, scraping down the sides as needed. If you want to use this as a dip, keep the consistency quite thick. Otherwise, add a few extra tablespoons of milk or oil to thin it a bit. Keep in mind that the sauce will be loosened further if mixed with starchy pasta water.
  4. Serve: Enjoy. This Walnut Sauce is especially great on Pizza with Pears and Walnut Sauce and Pasta with Creamy Walnut Sauce.

Recipe Notes

Don't waste those leftover caramelized onions - they make an amazing pizza base, burger topping, or salad addition (especially in Avocado Beet Salad).

This recipe will make approximately 1.3 cups of prepared Walnut Sauce.
