Creamy Curried Chickpeas - Bravabod

Simple chickpeas take on new life when tossed in a blend of curry powder, yogurt, celery, herbs, and juicy mango. There's no cooking required and this all comes together in under 15 minutes. This is terrific as is, piled into a sandwich, or stuffed into a radicchio leaf as shown above.

Shopping List
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 2 celery stalks, thinly sliced
  • 1 1/4 cups ripe mango, diced into bite-sized pieces
  • 1/2 cup plain Greek yogurt
  • 1/4 cup raisins
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons mayonnaise (Note 1)
  • 1 jalapeño, minced
  • 2 teaspoons curry powder
  • 2 teaspoons fresh ginger, minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • salt and pepper, to taste
  • radicchio leaves (optional, for serving)

Instructions
  1. Step 1: Combine all ingredients, except the optional radicchio, in a bowl. Mix well to coat the chickpeas and mango pieces in the creamy sauce.
  2. Serve: Enjoy this chilled as is, or stuffed into lettuce cups.

Recipe Notes

Note 1: Not a fan of mayo? Substitute it with mashed avocado or additional yogurt instead.

Recipe Notes

Note 1: Try to use a thick, Greek-style yogurt (I use COYO brand). Regular plain non-dairy yogurt may be used, but should ideally be strained overnight to remove excess liquid.

Note 2: Not a fan of vegan mayo? Substitute it with mashed avocado or additional yogurt instead.
