Applesauce Overnight Oats

    Oatmeal
  • 1/2 cup rolled oats
  • 1/2 cup non-dairy milk
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons almond or peanut butter (sunflower butter for nut-free)
  • 1 tablespoon honey
  • 1/2 tablespoon chia seeds
  • 1/4 teaspoon cinnamon
  • 1 scoop protein powder (optional) Apple Topping (Optional)
  • 1 small apple, diced
  • 1/2 tablespoon coconut oil or plant-based butter
  • 1/4 teaspoon cinnamon

Instructions
  1. Step 1: Combine all oatmeal ingredients to an empty lidded jar (mason jars, empty nut butter jars, etc). Stir well to combine, especially in the hard to reach corners - you want to make sure all of the oats are immersed in the liquid. It's ok if there are some chunks of nut butter remaining, those are the tastiest bits to eat the next day. Close the jar and refrigerate at least 4 hours, up to several days.
  2. Step 2: To make a warm cinnamon apple topping, heat the coconut oil or butter in a frying pan over medium-low heat. Add the apple and cinnamon. Cook for 5 minutes, stirring often until the apples are soft and fragrant.
  3. Serve: Top the chilled oats with the warm apples. Grab a spoon and enjoy.
